Ingredients
- 2 pounds boneless skinless chicken breasts
- 4 C low sodium chicken broth

2 T Moxie Taco Seasoning
-
1 can (~16 oz or 2 cups) diced tomatoes
- 2 C shredded cabbage
- 2 C chopped zucchini or yellow squash

½ C shredded cheddar cheese

Condiments of choice (taco chips, sour cream, salsa, etc)
Directions
- Arrange the chicken breast in one layer in the bottom of the crock pot / slow cooker.
Add chicken broth, Taco Seasoning and vegetables to a large bowl and mix to combine.
Pour mixture over the chicken breasts, put the lid on and cook on high for 4 hours or low for 6 hours*.
- Remove the chicken breasts from the slow cooker, place in a bowl and using 2 forks, shred the chicken.
- Divide the chicken into 4 equal amounts in serving bowls and top each with 1/4 of the vegetable soup.
- Garnish each with 2 T cheese, any additional garnishes and serve hot.

*Stovetop Directions
Prepare everything as above except, place all the ingredients in a large pot on the stove and simmer on medium high for 30 -40 minutes, until chicken is cooked through. The time will vary depending on the thickness of your chicken breasts.
