Perfect for nights when cooking feels like a cruel joke, this salad screams “I’ve got my life together” without actually requiring any effort. Sweet cranberries, nutty hazelnuts, and fresh herbs make each bite a flavor mic drop. Pile it on ciabatta, toss it over greens, or eat it straight from the bowl while giving your fridge the side-eye. We don’t judge.
Fast, fresh, and ridiculously delicious, it’s the no-cook meal that makes you look like a culinary genius without breaking a sweat.

Ingredients
-
2 cups of chicken (from rotisserie or poached chicken breasts)
-
1 small container Greek Yogurt (5.3 oz)
-
¼ C dried cranberries, roughly chopped
-
¼ C hazelnuts, roughly chopped
-
¼ C chopped herbs (parsley, basil)
-
1 T olive oil
-
1 T Mediterranean Seasoning
-
Hickory Smoked Salt, to taste
Directions
Combine all ingredients in a large bowl. Taste first and then season if needed.
Serve as a sandwich on ciabatta rolls or on a bed of salad greens. Also works well with crackers or crostini.
Recipe Note
- We used dried cranberries here, but you can use any dried fruit—apricots, raisins, blueberries, cherries, etc.
- We used hazelnuts, but this would also work well with almonds
- Substitute the parsley & basil with cilantro, thyme or tarragon.
