Ingredients

1 T butter

10 ounces andouille sausage, cut into 1/2" chunks, then cut into quarters

1 lb boneless skinless chicken breast, sliced thin

12 ounces raw shrimp, large size, shelled & deveined

2 T Olive Oil

3/4 C green bell peppers, 1/2 inch chop

3/4 C celery, sliced thin

1/2 C scallion whites ( set aside a few green tops cut on a bias for garnish)

1 C fresh okra, sliced

1 15 ounce can diced and fire roasted tomatoes

1-2 T Moxie Cajun Seasoning
-
2 C prepared rice, regular or cauliflower

Sprinkle of Moxie Flavor Bomb Anything Seasoning
Directions
Do all your chopping for the meat and the veggies.
Add butter to a large frying pan with nonstick spray and put over medium high heat.
Add sausage and cook for 1 minute
Add chicken and cook for 5-7 minutes, until meat is opaque and slightly browned.
Add the shrimp and sauté for 2 minutes until pink.
Pour the meat mixture into a bowl and set aside to keep warm.
Place the frying pan back over the heat and add the oil.
Add peppers, celery and scallion whites and sauté for 3-4 minutes until crisp-tender.
Add the okra and sauté for 1 minute more.
Pour the tomatoes into the pan and sprinkle with the Cajun Seasoning. Stir to combine.
Bring liquid to a simmer and let cook for 2 minutes. Add the meat back into the pan and stir to combine. Cook for 5 minutes more, reducing the liquid by half.
While simmering, heat the rice. Season with a shake of Flavor Bomb anything seasoning.
Divide the mixture into 4 equal portions and serve over 1/2 C of prepared cauliflower rice sprinkled with a few scallion greens for garnish. Enjoy!
