Ingredients
-
1 ½ pounds pork tenderloin (not pork loin)
-
2 TMoxie Smoky Maple BBQ
-
2 T Dijon Mustard
-
½ C apple cider or apple juice
Directions
In a large zipper bag, combine the Smoky Maple BBQ, mustard and juice. Massage the bag from the outside to mix it all together. Add the pork tenderloin and close the bag, removing as much air as possible. Roll the meat in the marinade to coat & place in the fridge for 8 to 24 hours. When ready to cook, remove tenderloin from bag and reserve the remaining marinade to make a sauce.
Grilling Method
Preheat outdoor grill to 400 degrees. Place the tenderloin on the center of the grill and cook for 5 minutes on each side until browned. Turn off the center burner, leaving the outside burners on. Grill the tenderloin for 12-18 minutes until it reaches an internal temperature of 145 degrees. Remove from heat, cover with a tinfoil tent and let rest for 10 minutes before basting with sauce, slicing and serving.
Oven Method
Preheat oven to 400 degrees. Place tenderloin in a baking dish, cover with foil and bake for 20-25 minutes until it reaches an internal temperature of 145 degrees. Remove from the oven and baste with the sauce. Place under the broiler for 2-3 minutes on each side until slightly browned. Slice and serve.
Sauce
Squeeze the leftover marinade into a microwave safe bow. Microwave on medium high for 2 minutes until boiling. Use as directed above.
