Ingredients

2 pounds chicken breast cutlets, sliced or pounded thin

1 tsp Moxie Flavor Bomb Anything Seasoning

2 T neutral flavored oil, like canola or peanut

2 ounces fresh arugula
-
½ C chicken broth
-
4-5 sun dried tomatoes, sliced thin (can be dry or oil packed)

½ C Half and Half
-
1 T Moxie Garlic and Chive Seasoning

4 T cream cheese, room temperature
Directions
Sprinkle chicken with Flavor Bomb Anything Seasoning. Heat oil in a skillet over medium heat. Cook the chicken until browned and just cooked through, about 5-7 minutes minutes. Transfer to a plate, cover and keep warm.
Add the arugula to the pan and sauté for 1 minute.
Increase the heat to high, add chicken broth, tomatoes, half and half (and any juice from the chicken plate) and Garlic and Chive Seasoning to the pan. Scrape any bits off the bottom of the pan to incorporate into the sauce. Bring to a boil and then turn the heat to medium. Let the sauce simmer until reduced by half and slightly thickened. Add the cream cheese and stir to combine once melted. This will help thicken and set the sauce.
Add the chicken back to the pan and turn to coat with the sauce. Serve the chicken topped with the sauce and accompanied with your choice of side dishes. Enjoy!
