1 ½ pounds boneless skinless chicken breast cut in 4 equal size pieces

8 oz Feta cheese

¾ Cup Greek Yogurt

1 pints grape or cherry tomatoes (washed and dried well)

Balsamic vinegar, balsamic reduction or prepared balsamic glaze for garnish if desired*

Directions
Season chicken with Moxie Flavor Bomb Anything seasoning.
Add olive oil to the pan and heat over medium high heat. Cook chicken on both sides until lightly browned and a temperature of 155° F. Remove from heat, cover with a lid and set aside until temperature rises to 160° F before serving.
While chicken is cooking, make the feta by combining feta, yogurt and seasoning in a food processor or blender. Pulse on high until you have a smooth consistency, about 20-30 seconds depending on feta. Set aside and keep at room temp while preparing the tomatoes.*
Heat a large skillet (preferably cast iron) over high heat until hot. Add oil, wait until very hot and then add tomatoes. Leave them in the pan, untouched, for 1 minute. You may hear them pop- don’t worry! Turn tomatoes over to blister the other side. Sprinkle with seasoning, stir gently as to not break them and remove from heat.
Place 6 ounces of chicken, 2 Tablespoon of whipped feta and ½ Cup tomatoes on a plate and drizzle with a splash of balsamic or balsamic glaze if desired.
Serve warm and enjoy!

Chef's Notes:
* If making the feta more than 30 minutes ahead of time, place in an airtight container and refrigerate. Bring to room temp before serving.
** To make an easy balsamic reduction that is sweeter and more flavorful than traditional Balsamic vinegar, simply add 1 C balsamic vinegar to a small pan and bring to a boil. Reduce heat and simmer for 15 -25 minutes until most of the liquid is evaporated and a thick syrup that covers the back of a spoon remains. Store in an airtight container for up to 1 month. Use on everything!
