Ingredients
-
1 C Jasmine Rice
-
3 C chicken stock (or water)
-
1 T Moxie Garlic & Chive Seasoning
-
1 ½ lbs chicken tenders (or chicken breast cut into 1” chunks)
-
1-2 T Moxie Cajun Seasoning
Directions
Rinse the rice in cool water until it runs clear* Add the rice, broth (or water) and Moxie Garlic & Chive seasoning to an Instant Pot -or- rice cooker (adjust settings as needed) Stir to combine.
Season the chicken on all sides with Moxie Cajun seasoning. Lay on top of the rice mixture.
Use the normal cook cycle for rice and let sit in the Warm mode for an extra 5-10 minutes to finish.
Remove the lid. Remove the chicken and place in a bowl. Stir the rice to mix It up. Scoop rice into a bowl and top with cooked chicken. Season with an additional pinch of Moxie Cajun Seasoning or Moxie Flavor Bomb Seasoning if desired. May also add a drizzle of EVOO. Enjoy!
Recipe Note
* Rinsing the rice is super important- removes the excess starch and makes it less sticky. You'll get a MUCH better result!
