Ingredients

2 rib eye steaks with excess fat removed (approx 18-20 ounces)

Moxie Flavor Bomb Seasoning
-
1 T butter
-
1 T olive oil
-
1 large sweet white onion, sliced thin
-
½ C dry red wine (or beef broth)

2 C cherry or grape tomatoes (or 1 14 oz can cherry tomatoes)

½-1 T Moxie Cajun Seasoning*
-
fresh basil or parsley garnish if desired
Directions
Melt butter over medium heat in a large skillet (preferably cast iron if you have one). Season both sides of the steak with Flavor Bomb Seasoning and set aside. Add onions to the pan and cook, stirring occasionally until they are softened, but not charred. About 10 minutes.
Transfer the onions to a plate and cover to keep warm. Add the oil to the pan. Increase the heat to medium high.. Add the meat to skillet and sear 3-4 minutes on each side for medium rare. This may vary depending on the thickness of your steak.
Transfer the steaks to a cutting board to keep warm and let rest. Pour the wine into the pan and add ½-1 T Cajun Seasoning*. Bring to a boil and scrape the bottom of the pan well with a wooden spoon. Add the tomatoes and cook for 2-3 minutes on high allowing the sauce to reduce and thicken. Slice the steaks and the onions back to the pan. Simmer until just heated through. Serve hot with fresh basil or parsley for a garnish if desired.
