Ingredients

2 lbs pork tenderloins (not pork loin), cut into medium bite-sized chunks

2 T cumin

1 T smoked paprika

1 tsp dried oregano

1 T kosher salt

2 T Moxie Garlic & Chive

3 T olive oil
-
1 lime quartered (to serve)

Your favorite toppings

Tortillas of your choice
Directions
Make the dry rub: In a small bowl, mix all spices until well combined.
In a large mixing bowl, add pork tenderloin chunks and the dry rub. Toss to coat evenly.
Cover and refrigerate for at least 1 hour (overnight for best flavor).
Remove pork from the refrigerator, add olive oil, and mix to coat the meat.
Let the pork sit at room temperature for about 20 minutes.
Preheat the grill to high heat. Add the pork and grill, turning as needed, until it reaches an internal temperature of 150°F, being careful to avoid flare-ups or scorching from the oil.
Remove from the grill and let rest for a few minutes. Serve with fresh lime wedges.
