Ingredients

1 bag (24 oz) baby potatoes or 4 small white potatoes

2 T oil

1 T Moxie Garlic and Chive Seasoning

2 pounds boneless chicken thighs*

2 T Moxie Smoky Maple BBQ Seasoning**
Directions
Preheat oven to 350 degrees.
Prepare the potatoes. (If using baby potatoes, cut them in half. If using regular size potatoes, cut into 3/8” wedges.) Toss the potatoes in oil. Season with Garlic and Chive seasoning and place in the bottom of your cast iron skillet (or other oven save pan).
Bake for 15 minutes. Remove from the oven, place the chicken thighs on top of the potatoes. Sprinkle with Smoky Maple BBQ Seasoning and bake for an additional 15-25 minutes, until chicken reaches an internal temperature of 165 degrees. Remove from the oven and serve hot.
Recipe Note
* Alternately, you can use bone-in chicken thighs. Simply add them on top of the potatoes before cooking them and bake for 35-45 minutes until chicken is thoroughly cooked.
**For a livelier version, you can use Moxie Cajun seasoning instead!
