The last thing you need after Slack pings, tight deadlines and a never-ending Zoom calls is a high-maintenance dinner. This chicken doesn’t need babysitting, constant basting, or your emotional support. It just needs a (slightly) hot oven and a little Moxie seasoning. You’ll end your day with dinner that looks like you tried really hard (spoiler: you didn’t) and tastes like the kind of meal that could cancel out at least two meltdowns. Ingredients

4 chicken quarters

2 tablespoons Moxie Garlic & Chive seasoning

1 tablespoon Moxie Mediterranean seasoning

3 tablespoons olive oil

1 small lemon quartered
Directions
Preheat oven to 300 degrees
Place chicken quarters in a large pyrex or sheet pan.
In a small bowl, combine olive oil and seasonings to make a wet rub. Stir until well-combined.
Coat chicken quarters on both sides and add lemon to the pan.
Pop the chicken in the oven and cook low and slow for about an hour and a half.
Cook times can vary so check that chicken is done by pulling gently on the leg. If it fights back the chicken isn’t done, pop back in the oven for 15 minutes.
The chicken is done when the leg is slightly loose or pulls apart.
Optional next step: Fire up the grill to around 600 degrees. Grill chicken skin side down for about 1 minute. Carefully turn over and grill the other side, another minute. Since the chicken is already cooked, you are looking to get a nice char for flavor. Adjust grill time to char preference.
